Strawberry Mojito Mocktails
This is a really refreshing, vibrant drink. This drink will surely become a family favourite.
Makes 6 servings
You'll Need:
110 g caster sugar
250 ml hot water
About 350 g strawberries, coarsely chopped
Strips of zest from 2 lemons ( peeled with a vegetable peeler )
250 ml fresh lemon juice
500 ml cold water
6 ( 455 ml capacity ) glasses
1 bunch of fresh mint leaves
1 litre lemonade
6 Lemon wheels, 6 lime wheels, fresh mint and strawberry pieces
Decorative straws
1. In a medium saucepan, combine the sugar and hot water, and stir over medium heat until the sugar is completely dissolved. Add the chopped strawberries and lemon zest to the hot liquid and remove from the heat. Set aside to cool completely.
2. Pour the cooled syrup into a fine sieve set over a jug or drink dispenser. With the back of a spoon or a rubber spatula, squish most of the berries to extract most of the syrup. Discard the solids.
3. Add the lemon juice and cold water to the syrup mixture and stir until well blended.
4. Divide evenly among the glasses. Add 6 large mint leaves and lots of ice to each glass. Top with lemonade.
5. Add a few strawberry pieces to each glass, place a lemon wheel and a lime wheelon the of each glass, then garnish with some mint and a decorative straw.
