Butter Biscuits

To make quick and easy biscuits using the rubbing in method, why not try this simple recipe for deliciously light and crumbly biscuits. Just five ingredients!

Makes 30

You'll need:

150g unsalted butter

225g plain flour

100g caster sugar

1 egg yolk

1 teaspoon vanilla extract

1. Preheat the oven to 180* C / 350* F. Rub the butter, sugar and flour in a medium bowl.

2. Add in some of the egg and all of the vanilla. You do not need all of the egg, just enough to bind the ingredients together to form a soft, but not sticky dough.

3. Form the dough into a ball, then turn it out onto a lightly floured surface. Knead the dough for a minute or so with the heel of your hand. (Tip: Do not add too much of flour as this will make your cookies dry.) Roll out your dough to a 1/4" (5 mm) thick.

4. Using a cookie cutter, cut out as many biscuits as possible; making sure to re-roll the dough. Place them on a baking sheet lined with tin foil. Bake them for 10-15 minutes or until golden brown around the edges.
